Who ever says breakfast is the best meal of the day, anyhow? I won’t lie – I love a good pancake, omelet or even granola bowl, but there’s no reason those dishes need to be limited to the beginning of the day. Nay, I say all breakfast, all the time!  And seeing as it’s #NationalBreakfastMonth, I figure why not celebrate that fact and get our waffle on after work?!

It’s true. A good wholesome breakfast gives us the energy we need to tackle the day, but a good, wholesome dinner concocted of breakfast food stuffs gives us the energy we need to enjoy all those Fall TV premiers. Maybe that’s where the holiday stemmed from – the need to indulge in delicious comfort food so we could have the stamina to stay warm and cozy on the couch as the temperatures drop. Maybe I’m making that up. Either way, breakfast at dinner is a winner by me, any day.

Now, I thought about giving you a list of 10 amazing breakfast ideas you could make for dinner – something a little more on the savory side than sweet. But seeing as all those posts already exist (just Google “Breakfast for Dinner Recipes” or visit Buzzfeed for 31 of ’em), I decided instead to provide you with 5 ideas for a base from which can start with – an origin story, if you will. From there you can choose your own adventure based on what’s in season, what’s in the pantry or simply what you’re craving right now.

After all, breakfast is THE most important meal of the day. Even if it’s at 7pm.

1. Eggs. These are probably the most versatile base because a good egg can take you anywhere. From omelets to quiche, to custards to cake, to the splendid simplicity of a fried, scrambled or hard, soft or medium boiled egg all by itself – they’re quick, delicious, nutritious and can carry just about any flavor or texture you throw at it. We suggest lots of cheese and some of base 2. Top with a small handful of microgreens and you have yourself one heck of a healthy, wholesome breakfast dinner.

2. Saute Greens. A lot of these are available at the farmer’s market or grocery store right now because they’re one of the few vegetables that actually appreciate colder temperatures. These could include spinach, Swiss chard, dandelion greens, Asian greens, beet tops, brussel sprouts, cabbage, sorrel or even the last of the Summer herbs. Chuck in a bit of olive oil or butter and some salt and pepper and you have a veggie based side dish (we like to stick them inside peppers), omelet stuffing or savory topping for pancakes in two shakes of a saute pan.

3. Bacon. Need we say more? Sauteed, candied, coated in chocolate, baked, fried or cured. Bacon makes everything better.

4. Carbs (aka pancakes, waffles, crepes, flapjacks, french toast, croissants, scones and anything carby). Last year for National Breakfast Month we gave you a pretty stellar pancake recipe – now get creative with it like you’ve never gotten creative with pancakes before. Forget the typical – albeit classic – butter and maple syrup. Instead, think sandwich. Use the fluffy, pancakes as a base for something more dinner savvy like slow cooker pulled pork, pickled cabbage and a creamy creme fraiche. Seriously.

5. All of the above. Now that’s a dinner feast fit for a king. Or breakfast. Or dinner. Am I right?
